DAOU Cabernet Sauvignon review: What are the flavors?
DAOU Cabernet Sauvignon is primarily made from Cabernet Sauvignon (83.1%) and aged 10 months in 50% new French oak.
The other grapes are Petit Verdot (9.1%), Merlot (7.6%) and Cabernet Franc (0.2%).
On the nose, is complex and inviting, with aromas of black fruit, including blackberry and blackcurrant, cocoa, and licorice with hints of vanilly and spice.
On the palate, this full-bodied wine offers bold and rich fruit flavors of black cherry and blackcurrant, with a balanced acidity that keeps the wine fresh.
The tannins are velvety and provide a supple structure to the wine.

There is a direct relationship between the sugar left in the wine after the alcoholic fermentation has taken place, i.e. Residual Sugar or RS, and ABV.
During alcoholic fermentation, the yeast transforms the sugar in the grape juice into alcohol.
Grapes with high residual sugar will therefore produce dry wine with a high ABV.
